Cask Matured is a gin made from the infusion of the most characteristic aromatic herbs from our estates in the Douro region.
The juniper and botanicals are placed in baskets inside an alembic and do not come into contact with the alcohol. Before the liquid is distilled, alcohol vapor passes through them. This allows botanists to release their essential oils in the steam. Then, when the vapor is condensed back to a liquid state, the essence of these botanicals is infused into the distillate. In order to obtain the desired intensity of each botanical, this distillation process can be done up to 5 times.
After a careful distillation in which we extracted the purest flavors and aromas, the gin was aged for 12 months in oak casks, previously used for Port, until it reaches its optimum point.
Amber color
On the first nose, the juniper and mint notes are mostly present. After swirling you'll get some sweet licorice notes, lots of black pepper, and orange peel also emerge.
Intense, aromatic and balanced, this dry Gin will please those who wants to enjoy it straight or on the rocks.

Herbs for this Gin were harvested in the Douro. The Juniper berries were picked in the month of December and infused for 2 days in a high quality 5 times distilled grape brandy.
Aging:
Aged for 12 months in oak barrels.
